Lumpfish caviar

Fish roe products or caviar are seen as expensive delicacies that are listed among other luxury food items. The priciest of these is true caviar which uses eggs from sturgeon fish caught in the Caspian Sea. Thus, in this world of high caviar prices, many welcome lumpfish caviar which is a more affordable alternative. This variety comes from North Atlantic water usually near Iceland.

The lumpfish is a round fish that produces small-grained roe that is crunchy to the bite. Lumpfish caviar is very briny and salty. To neutralize this intense flavor, this type of caviar is used in appetizers or as garnishes. The eggs are dyed black, red or gold which add a burst of color to recipes that call for a bit of fish roe.
