The word kosher is a Hebrew word that means fit or proper. It is now an accepted term in the English language and has become synonymous with what is right. Kosher food must be made according to certain specifications found in the Torah or Hebrew Bible and the various laws concerning food. One of the significant kosher laws is prohibiting mixing of dairy with meat.

Fish or anything that has both fins and scales is kosher. Any processed or filleted fish including kosher caviar must be kosher certified. The exception is whole fresh fish which can be bought at a supermarket but is best washed well and processed at home unless there is a kosher fish cutting area on the store premises.
