Lasagna refers to the noodle and the dish that includes the lasagna noodles. The noodle is flat with ruffled edges. They are best made with Durum wheat which results in a chewy and resilient noodle even after extended cooking. There are now lasagna noodles that can be layered in the lasagna pan with other ingredients without having to be pre-cooked. It depends on the moisture of the other ingredients and the heat of the oven to finish the cooking.
Because the dish has been adapted by cooks around the world there are numerous lasagna recipes. Almost anything can be made into lasagna – ground meat, poultry, seafood or vegetables. The constant ingredients, aside from the noodles are different kinds of cheeses and different sauces. Lasagna is a favorite potluck dish. It is an easy dish to prepare even for a crowd.
