Pumpkin Spread

As a child I hated eating vegetables. My parents could not get me to eat vegetables at all. As I got older I learned to eat carrots, lettuce and cabbage. I would eat them in my salad or in my soup. I found out that if I mixed pumpkin with vegetables, they tasted great. Today I eat my vegetables mixed with homemade pumpkin butter.
I discovered how to make homemade pumpkin market at a country fair. The lady who sold me pumpkin butter shared her recipe with me. It is very easy to do, all you need is: pumpkin puree, sugar, cinnamon, and ginger. Mix and cook over low heat the pumpkin with all the ingredients except sugar. Add the sugar later and when the mixture has melted, cover for a few minutes. Pumpkin butter tastes wonderful with vegetables and corn!
